A recipe that’s best when eaten cold; this dish is another dish that has high protein. It is much better if you use fresh ingredients, freshly picked from a garden. This dish is flexible, you can substitute peas with lentils you can also add meat and cheese.
Here are the ingredients:
One white onion finely chopped
1 teaspoon olive oil, salt and pepper to taste
Green pepper diced
8 Slightly whisked eggs
1 cup of cooked lentils
3 cups fresh spinach leaves
1 cup of chopped button mushroom
Procedure:
1. Preheat oven to 200 C
2. Heat olive oil and saute onion
3. add mushrooms and saute until golden
4. Add lentils and spinach stirring until spinach wilts
5. Remove from heat and add eggs and seasoning to taste
6. Transfer mixture to a casserole and pop in to oven
7. Oven cook for 30 minutes
8. Remove from oven and slice. Serve.
