Cannellini or white kidney beans is an excellent source of protein, it's taste is earthy and the texture is somehow starchy, mixing this with spinach makes it more grandeur and preferable. This dish has will surely satisfy your palate and best of all you don't need tons of ingredients just to prepare this dish.
Here are the Ingredients:
2 cups of spinach rinsed
1 can of Cannellini or white kidney beans
1 cup chicken stock
2 cloves of garlic
red pepper flakes
Procedure:
1. Add olive oil in a non stick pan in medium heat
2. Saute garlic and red pepper flakes
3. Add 2 cups of rinsed spinach and saute until it wilts
4. Add 1 cup of low salt chicken stock and the kidney beans, bring to a boil uncovered
5. Wait until the beans absorb all the stock and remove from the pan.
6. Serve
